Last week we have seen super foods for diabetes. Millet’s are one among them. Many of us would be thinking that healthy food is boring and is not delicious. But it’s not true. Today let’s learn to make nutritious and delicious recipes from these millet’s.
When I say millet’s, you would be wondering what millet’s are?As I told you last time, millet’s are nothing but the whole grains.Wheat, Ragi, Jowar, Bajra and Fox tail millet are among the list. Ragi java, Ragi sankati (ragi mudda),Bajra ke roti are among the traditional recipes.
Today let’s learn something new from them.
Fox tail millet also known as Kandani in Hindi, Tinai in Tamil and Korra in Telugu. Unlike rice,fox tail millet releases glucose steadily without affecting the metabolism of the body. The incidence of diabetes is rare among the population which consumes fox tail millet.
Fox tail millet Khichdi
- Onion – 1
- Green Chilly – 1 or 2
- Finely chopped Ginger – 1 inch piece
- Fox tail millet – ½ cup
- Moong dal split yellow – 1 tbsp (optional)
- Turmeric powder – a pinch
- Salt as needed
- Carrot – 1 medium
- Beans – 3-4
- Tomato – ½ cup
- Drumstick leaves – A small bunch
For the seasoning:
- Oil – 1 tbsp
- Mustard seeds – ½ tsp
- Urad dal – ½ tsp
- Cumin seeds – ½ tsp
- Whole black pepper – 2-3
- Red chilly – 1
- Hing – a Pinch
- Curry leaves – few
Chop all the vegetables into medium sized pieces.Wash and soak fox tail millet along with moong dal in 1 ½ cup of hot water for 2-2 ½ hrs.
Heat oil in a pressure pan, add mustard seeds, when it splutters, add Urad dal, cumin seeds, red chilies, hing black pepper and curry leaves.
Add chopped onions, ginger, green chilies and saute until onions turn pink.
Then add all the vegetables, drumstick leaves, turmeric powder, salt needed and saute for 2-3 mins.
Add the soaked millet along with the water. Check for salt by tasting the water.
Close the cooker and cook for 2-3 whistles on medium flame, then simmer for another 5 minutes and switch it off. Once the pressure subsides, open the cooker, add a tsp of ghee and mix the Khichdi well.
Serve hot with any raita of your choice.
Note: You can replace drumstick leaves with mint leaves.
